Keep the car a bit longer and learn to auto-x it. Vipers are a blast in the cones. At this point, your car is worth the same now as it would be with another 30K miles. Drive it and enjoy it.
I pay about $720/year with USAA for my Gen 2. I priced a couple other places and they were within a few dollars. I think not living in a big city makes a significant difference. Stated mileage is about 5,000/year

I drove the dragon on the way down. It's best done at night when there is no traffic. I have some decent go-pro video that doesn't do it justice. Highway 28 was the best road in the area in my opinion though.

Get Kumhos for the front. They will outperform any other tire, and match what you have in the rear. They're not terribly expensive either. I'm running the 295/35/17's.
How are the Gen 2 Koni's adjusted? I hope they're not like other konis I've used where you need to unbolt them, then compress them all the way and rotate while compressed to the desired setting.
I put over 6K miles on mine last year... plan on keeping it until it falls apart. Once the car has over 100K miles, I hope to be able to afford a Gen V!
If you want a GTS, buy a GTS. I own a GTS and have also driven an SRT. I put 6K miles on my GTS last year and loved every single mile. I'm also sure I would have enjoyed an SRT-10 just as much.
