I recently purchased an 04 Viper SRT w/8,600 miles. The tires look really good but I discovered that they are the originals and are being replaced. I've also had the oil changed. My question is, should changing the other fluids be a concern based on the age of the car?

Absolutely. If you do not have service records from the previous owner, I would highly recommend changing all fluids including tranny, diff, brakes, clutch, radiator, power steering. You were absolutely right to change the tires as well as engine oil and filter. Take a look at your air filters too.
