You can remove the cats and replace them with straight pipes if you like. There should be no ill effects on the engine or the PCM. It will be loud though, but loud is good!

In my opinion, 3.73 are to steep. With the massive amounts of torque we have, you would be fighting for traction at anything but minimal throttle. Also, first and probably second gear would become useless. They would go by in a blink of an eye...
My '96 has mild intake and exhaust mods and I think it really is the icing on the cake. Your list of mods looks to be about perfect. IMHO, after those listed, the performance return on investment starts to go down.
