I have started vinyl wrapping my car and I attempted the door with the mirror on. Unfortunately it is a PITA to work around and besides ill also have a seam. How difficult is it to take the side mirrors off?

Remove door panel, then there are 3 nuts (8 or 10mm) and 1 electrical connector holding the mirror on

Don't remove the door panel. There is an access panel on the hinge side of the door. Remove that and you will see the two nuts (5/16s I think). The 3rd nut is blind but easily accessible. Good luck.

Ditto. Removing the mirror is simple. The most difficult part is the careful removal of the door panel to avoid damage to the rubber weather strip.

Is it possible to remove the glass from the mirrors on a GTS to repaint the housing vs. masking it off?

In most vehicles, the mirror (glass) is adhered/glued to the articulating plastic backing pad. There's no way to remove or pry the glass away without breaking/cracking it. You'd also risk damaging the articulating mechanism inside the housing.
