I am installing new tires & wheels do I need to use the pressure sensors ? Will I get a fault code if I don't use them ?

It will look for them but if they are not there you will be fine. I would put them in though if you have them.

I believe mine have the wrong type for my 2005, it dings once after a few seconds, then the low tire indicator is showing on odometer readout.

Though, once it dinged me all the way into work, one ding every 10 seconds or so for 20 minutes non-stop. I checked the presure and everything was fine... It's only done that once.

My question is, if I didn't have sensors at all, would it still ding and show the low tire indicator?
