Congratulations on the purchase. As for your questions, it matters what year the car is. Based on your comment about 17" wheels, I'll assume it is probably an earlier GTS ('96 or '97??).
1) on front edge of seat bottom is lever, pull up and seatback is released
2) mirror control is on end of your arm
(aka your hands), earlier models didn't have remote mirrors
3) key release just to right of rear license plate, earlier models didn't have remote release
The gas cap corrosion is very common problem, dealer should replace under warranty no questions asked. The wheels are not known to commonly have problems, but again would expect dealer help if under warranty. Yes, later 18" wheels will work without problem.
Good luck with the new beast. Just remember to have it pointed straight when nailing the throttle..
