I used the Evans NPG (non-aqueous propolyne glycol) in the Viper I built for World Challenge last year. It has some great merits for racing, such as it's high boiling point, it's micro-boil properties and the fact that it builds very little pressure (5 lb radiator cap is all you need). The coolant operating temp goes up about 15 degrees with this product. They claim it is because it pulls more temperature out of the block and heads. It's a good product, though I don't think I'd spend $20 a gallon on it for a street car.
