Ok, I've gone through the archives and am still up in the air as to what is best for my dash/door trim, behind the seats. I've read to use:

Zaino treatment
NXT
Tanner's
Nothing at all but a cotton rag(with or without Windex)

I don't want a blinding glare on my 2000 RT's dash either, but something to spruce it up a bit as well as the other plastic pieces and glove box area. I haven't used the Tanner's yet on my seats. I guess that is next...the driver's seat is pretty worn though. I may just swap it with the passenger side for even wear!

Avoid any vinyl-rubber-plastic dressing that contains silicones. It's bad news for these surfaces.

On most of my cars, I just use a damp towell to wipe down the dash and door panels. Afterward you could use 303. Their website has lots of good info. It is the only product recommended by vinyl makers. You could also use the Zaino LIB, as if it is safe for leather, it should be safe for vinyl too. As with any other product, be careful around the lettering on the dash.

For leather, I use Zaino Leather in a Bottle.
