You can definitely damage the tire, especially the sidewall, if you don't get the weight of the car off of it while it is flat. As far as valve stems go, It's been a while since I was in the tire business, but back when I was, most valve stems were interchangeable. IMO, I would put a new one on, and if the manufacturer of the wheel designates a special size or make stem, I would stick to their recommendation.
