If you are talking about wheel hop that is generally from too low an rpm not too high. And certainly not from dropping the clutch too fast. If you want less spin, let it out slower (this is all common sense of course) but if you want to roast the tires you just let it out as fast as possible. With the rpm anywhere north of 2500 you should spin without wheel hop. Unless you are rolling and dropping it in 3rd gear or something? The only other thing I can think of is you are mashing the gas after you drop the clutch and hitting the rev limiter, which kills the engine for a split second and you'll definitely have things "go crazy"
If you are looking for smoke. Set your rpm at 3000 or so, at a dead stop, in first gear and drop the clutch. Then get on the brakes quite hard (brake stand) with your clutch foot while maintaining the rpm around 3000 to 4000. Don't hit the rev limiter (6200 rpm) and don't let the rpm drop too low. Just keep your car as near stopped as possible with the brakes and you'll soon have plenty of smoke piling off the tires. You'll also soon have to go out and buy new rear tires!
