Paxton wheel hop

If I'm in 2nd or 3rd around 3,000 RPM (paxton, built engine, dual walbros, 85lb injectors, oversized intercooler, exhaust), if I roll on the throttle such that I'm only at WOT around 4,500 rpm the car drives fine. But if I floor it, I get an immediate violent bucking and have to immediately lift because it feels like something is going to break.

My car came with a VEC2 and initially I had nothing but problems with it - I would get random surging at speed and at WOT the car felt like it was barely making any more power than stock. I got rid of the VEC2 and did a custom dyno tuned 3 bar MAP tune on the stock ECU. That cleared up all the drivability issues and made the car feel like a 700RWhp car, but that's also when the bucking issue started (although a dozen dyno pulls were fine and the fuel curve looks clean, I only noticed the bucking the first time I hit it on the street)

In my higher hp cars when I lose traction at speed (e.g., at 60mph) I can feel the rear wheels spinning but the car itself itself feels smooth. This here feels like something like the differential is on the verge of breaking if I stay in it. However, all my other cars everything is solid mounted and no bushings on the suspensions (just rod ends), so I'm wondering if I'm experiencing wheel hop because that's the area of the curve where the Paxton immediately spikes up?

My Gen3 (no Paxton) had wheel hop until I installed poly bushings in the suspension, lower shock mounts, diff mounts, and motor mounts.

I also have a modified (heads, cam, intake ... all n/a stuff, no f/i stuff) 2008 and 2017 and neither of them wheel hop - if I stab the throttle it just goes (albeit with some wiggling).

Part of me wonders if this is something mechanical like wheel hop because of how hard the paxton hits in that range, and part of me wonders if maybe it's something related to the tune still (although it looks fine of the dyno ... but of course on the dyno you're starting a run in a higher gear and lower RPM, this seems specific to if I try to go WOT around 3k rpm)

Try adding a little more rear toe-in. Also try dropping the rear pressures a couple of psi. What tires are you running, and how old are they?
