Check the throttle position sensor.
I doubt it's the cam sensor as you would likely notice a failure across the entire rev range and it would more than likely throw a check engine light or code as well.

I would agree with the others though that the Walbro is the way to go over stock.
Not trying to discredit anyone but if the heads are coming off anyway they should be able to be locked down in a drill press and the bolts should be able to be drilled out. It just seems like a machine shop should be able to do this work.

The thing with most aftermarket Viper wheels is that they are all custom made to the application. You can get an idea of what the wheels look like in pictures but most websites don't allow you to "see" them on the actual vehicle. There are far fewer Vipers on the roads than Camaros, Mustangs...
