Catalytic converter, too many people never let their cars warm up, driving to cars and coffee two miles away is not enough. Mine did the same thing before I fixed it.

Typically an overheating cat is caused by an excessive amount of unburnt fuel getting into it, this could be caused by a stuck fuel injector or a misfire on one or more cylinders. In my experience, the most common cause of a misfire on a Gen1 Viper is faulty plug wires, if a spark plug boot fails, and the spark arks through the boot, causing a misfire.
