Frank, Make sure you have 2.25" dia springs matched to the same dia seat (perch) or a 2.50" spring with appropriate seat, they could be mismatched. You might have helper springs. If so verify that you have an alignment collar between the helper and main spring. If all of this looks right, verify that your spring is seating properly in the upper perch. If all is found proper, you can slide a short section of pvc pipe over the shock housing that serves as a buffer and does a great job of keeping the springs aligned.

Your spring rates sound fine. One nice thing about the JRZ's is that you can effectively change the wheel rate by altering the shock pressure due to the large shaft diameter. You can run 160 to 220 psi nitrogen and see what you like.

Regarding the rubbing, make sure that the lower spring perches have the step in them to center the spring around the body of the shock. The lower most ring is the lock ring and is flat. The ring above it should have a step on the top and the spring should center on it with little side to side movement. If they do, then your spring must be deflecting under compression some. Consider a 2.5" id spring with the appropriate hats and perches if this is the case, or use some plastic / delrin like BW suggested.

An 8" spring will need a helper spring to keep it "attached" to its top perch when the suspension goes into full droop. If you don't use a helper, the top of the main spring is free to dangle around during full droop and smash/rub the side of your shock body.
