Elusive oil leak

I have an elusive oil leak on my 97 gts. Have replaced timing chain, rear seal, and PCV hoses. I have read that thermostat housing is also a problem. Can this be changes easily? It looks hard to get at.
Any suggestions

You don't mean the thermostat housing is oil related do you ? Only water in it. Also check the sensors that screw in the block at the front right, they can seep oil from the plastic body. Check where the dip stick tube goes in the block.

What do you consider an oil leak? Missing about a QT of oil in 1200 Miles?

Or oil in your engine bay?

It is dripping on the pavement and collecting on top of the water pump. The sensors have been checked. I rechecked the engine and the left valve cover appears greasy on the front. Could it be a valve cover?
