How much HP

I have a 2000 RT/10
I just changed out my stock cats with some random tech metal subs. S&B Filters and Tubes, and Mopar Catback Performance Exhaust.

How much HP/Torue do you think I am putting down now

I'd guess 430-ish? At our last dyno day the Gen. II guys with bolt-ons were doing about that.

With K&Ns, plugs/wires, cat delete, mufflers and a VEC, I'm barely overcoming driveline loss in my car (rated from the factory at 400HP at the crank; putting down 410HP now).
